I was craving for eggplant the other day so I thought of making my own version of Filipino Tortang Talong or Filipino Eggplant Omelet. I went to Randazzo's market located at Gratiot then bought this 3 pieces of smooth, long and purple eggplants. When I got home, I hurriedly walked straight to my computer pulled out the Filipino recipe. Just wanna make sure I'm doing it right and guess what? It really made my day. I have corn and rice for my side dish. Oh man, delicious! Good for my belly. Anyway, if you want to try this, here you go, help yourself, its very easy. It will only take 30 minutes. Goodluck!


Ingredients:

3 eggplants or talong
3 -4 eggs; well beaten
Salt and pepper to taste
Cooking oil


Cooking Instructions:

Grill the eggplant until wilted. When cooled, peel off skin (retain steam for handle). Flatten eggplant using the back of the pork. Set aside. Beat eggs in a bowl and season with salt and pepper. Submerge eggplants one at a time in eggs. In a pan, fry the omelet until golden brown on one side, then flip using a spatula and fry the other side. Put on a platter and serve.

Cooking Tip:

You can add shredded cheese or ground beef or pork (sautéd with garlic and onion) or combination on top of the omelet before flipping. Also, make sure to pour additional beaten eggs over the cheese or ground beef to cover before flipping and frying the other side of the omelet.

A Saint is often an ordinary person who has lived an extraordinary life of virtue and faith. As Catholics we should use these exemplars to inspire us in our daily lives.


July 2 - St. Oliver Plunkett (1629-1681)


St. Oliver Plunkett was born in Loughcrew, County Meath, Ireland in1629. He came from a prosperous family and had an aristocratic Irish heritage. His early education was guided by his cousin Patrick, Abbot of St. Mary's in Dublin and who would later become a Bishop. This was a difficult time in Ireland as war was being waged between Catholics and Protestants. An excellent student who felt a calling for the priesthood, he was sent to Rome where he attended the Irish College. He was ordained in 1654 but could not return to Ireland. Cromwell had defeated the Irish Catholics and .the practice of Roman Catholicism was banned. Practicing Catholic Clergy were arrested and executed. Oliver remained in Rome for a number of years and became a Professor of Theology at the Propaganda Fide. It was here that he was made Archbishop of Armagh and Primate of All Ireland but he did not actually arrive in Ireland until 1670. This was a more tolerant time and he went about rebuilding the Faith. Unfortunately, the persecution of Catholics would soon begin again and Archbishop Plunkett was arrested and tried for treason. No witnesses would testify against him in Ireland so he was moved to London were he was found guilty by an all Protestant jury. He was hanged, drawn & quartered on July 1, 1681. He was canonized by Pope Paul VI in 1975.



This week pray a Rosary in his honor, his feast day is July 2nd.

If you have kids or relatives age 8 - 12 years old, I suggest to inform them about this book. A great story about slavery in the United States of America happened before the civil war. Believe it or not back then children were extremely abused by their own parents. Thats true, they were treated so bad. Children were suffered and struggled so hard to find ways to elope from their evil parents. Poorly, human rights wasn't existed at that time thats why parents can easily get away without punishment. This story will help young children to understand what is right and wrong, to speak and stand up for them selves without fear. An interesting story that you should read and pass on to your children. I strongly recommend this to all parents, teachers and children this will be a good discussion topic. You can purchase this at barnes & noble.
